As I mentioned last week in my post about my Chocolate Fantasies, Angelgirl (my 12-yr-old daughter) was taking a chocolate cooking class at camp college. I promised to share one her recipes from the little booklet she brought home when the class was over. It isn’t a “diet” recipe, but it is the least fattening recipe in the booklet (except of course the homemade playdough - but that isn’t eatable).

Chocolate Chip Biscotti - you only need one bowl to mix it all in.

Makes approx. 24 (12 for each log).

Ingredients:
1 cup all purpose flour
1/3 cup cocoa powder
1 tsp baking powder
Pinch of salt
1/2 + 2 Tblsp granualted sugar
1 cup cocolate chips (or 6 oz of your favorite chocolate bard chopped into small pieces)
3 medium eggs
1/2 tsp. vanilla

Combine all dry ingredients in a bowl and stir together to mix completely.

Add eggs and vanilla, mix into dry ingredients with a rubber spatula. Mix completely until dough looks and feels like thick mud, wet throughout.
Divide dough into two equal portions in the bottom of the bowl.
With wet hands and using the spatula, lift half of the dough out of the bowl onto a baking sheet or parchment paper. Use hands to shape into a 6 inch log. Repeat with the second half of the dough to make another 6 inch log.
Pat the log down so it is the same height throughout the dough and press slightly to flatten top.
Bake at 325 degrees F for 20 to 25 mintues until firm to touch.
Allow to cool then slice into 1/2 inch wide pieces.
Turn pieces on side and bake again for 5 to 8 minutes (longer cooking time will make for more crunch).
