A healthy salad is one of my favorites, so I love collecting yummy low-calorie salad dressing recipes. I hope you enjoy this one.
Next-to-Nothing Salad Dressing
Serving Size : 16
12 ounces tomato juice
1/3 cup celery — chopped
1/4 cup onion — chopped
2 tablespoons green pepper — chopped
2 teaspoons lemon juice
1 teaspoon sugar
1 teaspoon garlic (or a clove or two)
1/4 teaspoon Worcestershire sauce
pinch of salt (to taste) or no salt if you are on low sodium diet
(Note: original recipe called for garlic salt – but we feel the fresh garlic is much yummier and healthier and we add LOTS, often roasted before tossing it in – mmmmmm good!)
Place all ingredients in blender container. Process until smooth. Cover. Refrigerate at least 4 hours to blend flavors. Dressing may be stored up to 2 weeks. Makes 2 cups. Per tablespoon: 3.5 calories. (From Master Cook)
