These new colors for califlower are so pretty and I’m sure will encourage  kids to eat their veggies.  They even retain their color after cooking too, so think of the possibilities. 

Adding these colors of califlower to your veggie tray can add a burst of color instead of just the usual drab white.  A lovely cream of califlower soup in purple would be so pretty.  Roasted or steamed, chopped and then tossed in a rice dish or pasta dish would be really pretty too.

Raw, roasted or steamed I adore califlower and I will definitely be on the look out for the various colors.   I don’t add anything to mine to keep the calories low, except once in awhile I mix in a bit of roasted garlic - mmmmmm good!  

However, a light spray of olive oil is a nice touch before roasting.  A sprinkle of grated cheese if also wonderful.   Steamed or roasted califlower can be whipped up to replace mashed potatoes or mixed in with mashed potatoes for additional nutrition and to reduce the calories.  It’s a sneaky way to get veggies in kids’ tummies too.   Adding a bit of color and veggie goodness to mashed potatoes with these varieties of color is an added bonus.     A light spritz of lemon juice is also good on califlower (and broccoli).   

A rainbow of califlower would also make a great dish for lots of holidays - especially Easter.  The orange califlower would be very cool for Halloween and Thanksgiving.   Purple is my favorite color, so I would serve that any time and would be double the fun with some purple carrots too. 

They have been around for a few years in the U.S. but this is the first time I heard about them in the article linked below.  They are created by selective breeding (not genetic engineering).   Some scientists say the added color also means added nutrition, (richer in naturally occurring antioxidants and higher in vitamin C).   “The orange cauliflower has higher 25 times the concentrations beta carotene, a form of vitamin A that encourages healthy skin.  The purple colour comes from anthocyanin, which may help prevent heart disease by slowing blood clotting.”    (Source: Daily Mail article)
