Today we had a roasted chicken and steamed asparagus for dinner, along with roasted onions that were cooked along with the chicken. Everything was so great, simple and easy to prepare. I’m actually full and didn’t have all that many calories – with the weighed portion of skinless chicken and an estimate on the veggies probably about 400 calories.
Earlier for lunch I had had a BIG seedless cucumber sliced with just a little low fat ranch dressing drizzled on it (about 30 calories worth) – it was crunchy and a perfect cool meal on a hot day. I wasn’t really hungry and it was so big that it filled me up. Breakfast was an Extend protein bar (150 calories).
Everything tasted so yummy today, I just wanted to share that simple can be tasty and satisfying. After a year getting my tastebuds used to healthier eating, it can still be surprising sometimes how good healthy foods taste. Also once I sign off here I will trying out my new fluidity exercise thingy – will let you all know how it goes.
