Heavenly Recipe

By Chef Tom: Summer is almost over, but there is plenty of time to enjoy the fresh flavors from the earths harvests ! The title says low fat, but that does not mean low flavor. This is a simple recipe that goes great for lunch or dinner. Feel free to experiment by adding some fresh vegetables from your home garden.

1 small zucchini, sliced
1 small sweet red pepper, chopped
1/4 cup canned black beans (rinsed & drained)
1/4 cup salsa
1/4 cup low-fat shredded cheddar cheese
4 burrito size whole-wheat flour tortillas

Place zucchini, pepper and 2 tablespoons of water in a large non-stick skillet. Cook over medium-high heat until slightly tender, about 4 minutes.
Stir in beans and salsa; heat through, about 2 minutes.
Spoon 1/2 cup of the mixture onto each tortilla and serve each with 1 tablespoon of cheese. Fold the ends of the tortilla over, roll and serve.
