This weekend I tried another combination and made a green smoothie.

I used 1 mango and about 2 oz of low fat coconut milk and a big bunch of parsley, along with 1 1/2 cups of water.

I  tossed in way too much parsley because that was all I could taste.  I wanted to use up what was left of the bunch I had brought a few days ago but I should have probably just used half in the smoothie and the other half in the soup I was making.   I managed to drink about three-quarters of it.   A previous smoothie I had made with parsley was very good and I think this one would have been too if I had used less parsley.

I will definitely use parsley again in a green smoothie (just not as much).  I’m not sure I’ll be buying any more mangos though.  They are expensive and if they are not ripe they make a very bitter smoothie – learned that from the first experiment making green smoothies.  Also the mango was a pain to peel and remove the pit.  I love the taste, but too much work and too expensive to be using when I need to make a quick green smoothie in the mornings on my way out the door.

For green smoothies this week I picked up bananas and a couple bags of frozen peaches (no sugar added) that were on sale.  I also have some cucumbers and aloe vera juice (to help heal my gastritis and Barrett’s esophagus.   I’m hoping this combination is tasty.  The vera juice smells a bit strong, but I took a TBL this morning and was able to get it down and only took a small sip of water afterwards.
