This is one of my favorite recipes to make when I am planning a special brunch for my family on the weekend. It is from a little booklet of healthy recipes I picked up years and years ago at the check out counter of a sumermarker, the title is “Star presents Hollywood’s hottest low-cal recipes & weight-loss tips” (2003). I made a few modifications and made it even lower in calories.
The recipe was originally 334 per serving but with a few substitutions - refigured the calories and it comes to 240 calories for 2 servings (could be less it was an estimation). The original fat was 19 g - but without oil it is probably almost 0. Carbs 29; protein 11. Note: It’s big enough for 3 servings, if you are serving other things like fresh fruit and\or a hard boiled egg on side.
Healthy Baked Apple Pancake - (with added changes for even lower calories)
2 servings egg white or egg substitute (to equal 2 eggs)
1/2 skim milk
1/3 cup flour
1 tsp vanilla extract
sprinkle with cinnamon to taste
1 golden delicious
0 calorie butter flavored spray
2 Tbl apple juice
1 golden delicious apple (peeled, cored and sliced)
Preheat oven to 450 degrees. Spray an oven proof skillet pan (nonstick) and add apple juice. Saute apple slices until golden on both sides (about 8 mins). Mix rest of the ingredients to make batter and pour over apples. Cover pan and cook for 3-4 minutes. Uncover pan, place in oven, bake 5 mins. Remove pan from oven, slide pancake out on a big plate, slide back into pan so the unbrowned side is on the bottom. Return pan to stovetop and cook on medium heat 1-2 minutes. Slide on to plate and serve. Optional: sprinkle with a bit more cinnamon and\or Splenda brown sugar.
