Mama Kelly found another yummy low calorie recipe while out jogging around the web, this one is from Recipezaar.

Eggplant Mexicana Recipe
This is a low cal do ahead side dish. Make it as spicy as you wish. Makes 6 servings at 36 calories each with only 0.3 grams of fat.

1 lb eggplants, peeled and cut into 1/2 ” cubes
1 (16 ounce) can tomatoes
2 cloves garlic, minced
1/4 cup onions, minced
1/4 teaspoon chili powder, more if desired
1 dash pepper

  1. Combine all ingredients in a skillet.
  2. Simmer gently 15- 20 minutes or until eggplant is tender.
  3. Cool and then puree in food processor.
  4. Prepare a day ahead and reheat in microwave.

Diet tip: Spicy foods help curb your appetite.
