The second week at College Camp Angelgirl (my daughter) had a class called “Kids in the Kitchen International.” So every day she was bringing home goodies for us to sample. (First week she had the chocolate class, I shared the Chocolate Chip Biscotti recipe last week).

Here is a wonderful Key Lime Coconut Bar recipe she made. (It is NOT diet friendly, but yummy!)

Coconut Butter Crust
1 3/4 cups flour, 1/4 cup confectioner’s sugar, 1/4 tsp salt, 1 1/2 cup flaked coconut, 3/4 cup plus 2 Tbsp unsalted butter cut into pieces, 1 egg, 1 tsp vanilla extract

Lime Filling
6 eggs, 3 cups sguar, 1 Tbsp lime zest, 1 cup lime jice, 1 tsp. baking powder, 1/2 cup flour

For Crust:
Place flour, sugar, salt, and coconut in bowl and cut with pastry cutter until coarse crumbs form. Add egg and vanilla blending in with a wooden spoon until mixture forms a ball. Press into a 9×13 inch pan and bake at 350 degrees F until light brown (15 minutes). Allow to cool completely.

For Filling:
Combine eggs, sugar, lime zest and juice, whisk until smooth. Add baking powder and whisk in completely. Add flour, whisk unitl well blended. Pour filling over crust. Bake at 350 degree F for 30 to 25 minutes until set. Remove and cool completely. Dust with powdered sugar and refrigerate leftovers.

Yield: 24 bars
